Veggie Stuffed Zucchini

Prep: 15 minutes
This simply delicious stuffed zucchini is not only an eye-catcher when you see it on the dinner table but it is wonderful for all lovers and nonlovers of zucchini. It makes the perfect pairing with almost any dish and is stuffed full with tons of flavors that will leave your mouth wanting more. The stuffed zucchini is light and packed full of veggies that are tasty and good for you.

Ingredients

4 small zucchini
1 Tbsp. water
1 ½ cup corn
1 medium red bell pepper- chopped
8 green onions- chopped
1/3 cup basil- finely chopped
1 Tbsp. EVOO
Salt- to your liking

The Process
 
1. Cut zucchini in half long ways; like so

2. Place the zucchini in a microwavable dish with 1 Tbsp. of water. Cover the dish with plastic wrap, leaving one corner open for ventilation. Microwave for about 3-4 minutes or until the zucchini is tender.

3.  Uncover the zucchini. With a spoon, scoop out the inside of the zucchini and place them on a platter or a cookie sheet. Like so…


4. Now it is time to mix up the stuffing. In a medium size bowl combine the corn, red bell pepper, green onion and basil. Top it off with the extra virgin olive oil and salt.

5. Its time to spoon the filling into the zucchini and enjoy!!
