A dinner is truly not complete until you have some outrageously delicious homemade onion rings on the side of your plate. These onion rings can be paired with multiple dinners; steak, hamburgers, pulled pork sandwiches (a recipe soon to come) and my favorite chicken fingers. So pull out your fryers or a large pot and let the aroma of crisp and crunch onion rings fill the air! Enjoy!!
Ingredients
2 large Spanish, white or yellow onions
2 cups buttermilk
Salt and pepper
1 ½ cups all-purpose flour
¼ cup yellow cornmeal
About 1 quart vegetable oil
The Process
1. Peel your on ions and slice them to be about ½ to ¾ inch thick and separate them into rings.
2. Combine buttermilk, 1 ½ tsp. salt and 1 tsp. pepper into a large bowl.
3. Add onions rings and toss well. Allow them to marinade for at least 15 minutes.
4. In a separate bowl combine the flour, cornmeal, 1 tsp. salt and ½ tsp pepper. Add some cayenne powder if you want some spicy with your crunch
5. Line a baking sheet with paper towels to the finished onion rings have place after they are done.
6. Heat the oil to 350* in a large pot or table-top fryer (a candy thermometer attached to the side of the pot will help maintain the correct temperature) Working in small batches, lift some of the onion rings out of the buttermilk and dredge them in the flour mixture.
7. Drop into the hot oil and fry for about 2 minutes, until golden brown. I only do about 3-4 at a time, it goes by quick.
8. Once they are a nice golden brown color, place the finished onion rings on the baking sheet, add a little extra salt on top if you wish.
9. If you would like to keep the onion rings warm place them in an oven heated to 200*, they will stay nice and crisp for about 30 minutes in the oven.
