Colorful Penne Pasta

Prep: 15 minutes   Cook 15 minutes   Chill: 2 hours

This dish is quick, easy and looks so bright and colorful on your plate! The Colorful Penne Pasta could be served either as a side or main dish and would be paired great with my veggie stuffed zucchini. This colorful pasta is light and full of wonderful tomatoes that will leave your mouth wanting seconds (or thirds) without feeling the guilt =) Enjoy this tasty colorful treat!
   
Ingredients
3 cups uncooked penne pasta
1 medium red tomato cut into wedges
1 medium yellow tomato cut into wedges
1 orange (or another red/yellow) tomato cut into wedges
¼ cup finely shredded parmesan cheese
Lemon basil Vinaigrette
            1/3 cup olive oil or vegetable oil
            ¼ cup chopped fresh basil leaves
            3 Tbsp. of lemon juice
            1 tsp. chopped garlic
            ½ tsp. of salt

The Process

1. In a small bowl combine all the ingredients together for the lemon basil vinaigrette with a wire whisk. Cut all tomatoes into wedges.


2. Cook and drain penne pasta. Rinse with cold water; drain.

3. Toss pasta and half of the vinaigrette in large bowl. Cover and refrigerate 2 hours or until serving.

4. Just before serving, toss pasta, tomatoes and remaining vinaigrette. Serve with cheese.



5. Enjoy!
